Title : STUDIES ON ESSENTIAL OILS, PART-14; NATURAL PRESERVATIVES FOR BUTTER
Abstract : Essential oils extracted from ten spice materials have been tested to prevent butter deterioration stored at room temperature. Butter oxidation and lypolysis were determined by measuring peroxide and acid values respectively. Most of the oils have been found to possess greater anti-hydrolytic effects than commercial preservative such as butylated hydroxytoluene. Volatile oils isolated from ajowain (YAVANI), anise, Cumin (JIRAKAM), Saunf (MISREYA), Sowa and Peppermint were found to possess excellent preservative activity. The oils of Coriander (DHANYAKA), Turmeric (HARIDRA) Ginger (ARDRAKA) and Basil (TULASI) were comparatively less effective.
